Multichannel analogue audio outputs are sometimes absent from Blu-ray players (as indeed are the corresponding inputs of amplifiers and receivers), with manufacturers assuming you're using HDMI throughout. But what if the AV powerhouse at the heart of your system lacks HDMI? You could consider Octava's HDSA71, a useful gizmo which will decode multichannel tracks (up to 7.1) and present them in analogue form to a series of phono connectors. It also acts as a 4-in/2-out HDMI switcher.
