When you touch your iron to a component that part heats up. Your goal is to heat the part up so rapidly that you melt the solder and get the job done before the heat has a chance to spread throughout. If you leave your hot iron on the component for longer than a few seconds you could endanger the component by melting parts of it due to the extreme heat.
